Renowned chef Casiano Reyes celebrates his second year in his “Spontaneous Cuisine” restaurant.In a tucked away street close to the heart of San Jose del Cabo is a restaurant that is causing quite a stir within the dinning community as well as in the ranks of Mexican gastronomy.
Casiano Reyes has created the ultimate culinary trip throughout the varied regions of Mexico in what he calls his “Spontaneous Cuisine.”
Arrive at Casiano’s and you will be greated by a wave of blue color, walk through its unique portal and sit down in a vibrant, bold dinning room. The walls feature art work, specializing in contemporary artists, many of them local to Los Cabos.The tables are spacious and graciously set with crystal and unique marble chargers. When presented with your menu, you will notice the exquisite craftsmanship of the multi- textured handmade paper cover. Open the menu…..and be totally surprised!
“Spontaneous Cuisine originated from my desire to not be constrained by ingredients on a menu that are not always at their prime, or are of a lesser quality,” says Casiano. “When I walk into the kitchen and create my daily menu, it is basically just a skeleton for what is to come. If a client loves tomatoes, and tomatoes are in peak season, then I will create many courses using this ingredient, the same with foie gras, or mushrooms, or prawns…it doesn’t really matter. What matters is the essence of the moment…and for the client to know that many times it a dish made specially just for them…many times not re-created.”
Casiano’s also features a private dinning room that accommodates up to 30 seated guests and upto 60 for cocktails.
